What I normally do is request from the customer a time frame for set-up that would not conflict with any other traffic.  If there is going to be any other traffic, it's generally very minimal.  For example, I normally set-up before the caterers, bakers, chair/table set-ups arrive, so that there's room to move and clean up afterwards.  

If there is going to be minimal traffic, I normally choose a corner with the roll of line starting from one point of the room and ending towards the corner of the room (basically I try to stay in corners or against the wall with sometimes chairs blocking the area that I am working at, if there's medium traffic).
