Chris,

I did a communion last year and made a 3-4 foot cross sculpture to hang on 
the wall over the buffet and draped tulle from one side to the other - it was 
beautiful.

As for the tables, if she doesn't want too many balloons, you could use your 
basic glass bowl (found in dollar store) filled with water and float a candle 
in it.  You could place some greens and ivy around the base with some small 
2-3" balloons into it for added color.  It would be very elegant and the bowl 
could represent the baptismal basin.
