When putting a topiary "ball" on the top of a pedestal, we use the 31" as is, or, usually, cut it to about 28". This gives you the clearance you need so people can see across the table (14-24 rule). We have also cut the 30" columns the same way as we sometimes want them to be 3 sizes: 10", 20 or 21", and 30" (they come 21" & 30") They look great with lights inside them! Lomey is easy to cut. We use a table saw because it's handy, but you can also use a hacksaw or, I've been told (we've not tried this method) a hot wire such as is used for cutting styrofoam.
