The best advice I can give you is to do what I did when I had my first 
balloon drop.

I was fairly lucky in as much as I had access to a church hall for free via a 
relative, but hopefully you might find a facility such as that who will lend 
you their hall for a couple of hours.

I bought a couple of hundred dirt cheap balloons, and rigged drop after drop 
all evening long, until I was sure I could do it in my sleep.

Obviously I couldnt anticipate the actual rigging, so I made (and still do) 
sure that I saw the venue myself and noted the rigging points in advance.  
For my test drops in the church hall, the ceiling was impossibly high and 
since they wouldnt have been too pleased at me sticking anything in their 
walls, I actually did all of my test drops in the corridor which ran along 
the side of the hall, which had a much lower ceiling and places I could just 
hang a net onto.

I personally would never try anything new out 'on the day', this particular 
church hall has been very useful and has seen some lovely decor including 
pavilions etc, which were put up for no audience other than myself, and no 
reason other than just to be damned sure I got it right when someone was 
paying me to do it.
