Well, I usually go near the hostess stand and "practice" on new designs I've been thinking about or improve some others. I always try to make sure the hosts/hostesses have bracelets or rings or something attached to the station to advertise myself. I don't expect the employees to tip me because they're walking billboards when I'm not in that part of the restaurant. So if there's down time, I go make them into my billboards! Otherwise, I'll slowly walk around the restaurant working on something new. It gets people's attention because they're always trying to figure out what I'm making and sometimes, I not only surprise them, but myself too!
