Jack,

Just an assumption on my part, but it sounds like
she's not too desperate for the money.

Until you see how it goes, you could just take the
percentage you want, and agree to donate whatever else
she wants to a charity that you both like.  That way
the customers feel like they're getting even more for
their money.  Of course, this has to be worded
carefully so that it doesn't sound like she's the only
one making the donation--technically you are as well.
