I am a 50% down person as well.  One problem with such a small deposit is 
that it is not an amount valued enough by a client to bother them if they 
cancel last minute.  My cancellation small print clause looks like this:

The Small Print stuff:   A 50% deposit is required to reserve your date  
(Master Card & Visa accepted) and the remaining balance is required upon 
arrival.... Cancellation policy:  Events canceled one month prior to event 
are fully refundable.  Events canceled between three or four weeks prior will 
be assessed a $25 service charge.  Events canceled two weeks prior to the 
event will incur a charge of $5 per child for supplies purchased.  Events 
canceled less than one week prior to the event will forfeit the deposit.
