I usually carry sharpies with me, but I rarely use them. Like others have said, sometimes there's enough time to just add a bit more detail. And of course, if you're trying to entertain, you have one more tool to play with. I've always liked trying to do the best I can without markers. But that's more for me than for anyone else. Now, that said, you can make eyes without markers. In Marvin Hardy's 321Q book there's an eyeball made out of one 321. This is probably my favorite use for a 321. The balloon already has two colors, so the marker isn't needed.
