Approximately how many tables are there at this restaurant. It seems a shame that you would let good twisting opportunities get away from you. No offense intended here, but in the time it takes you to make that one hat you could be expanding to make others. (unfortunately, with the vast plethora of hats out there that can be made, especially if you check the balloon hq, or even if you ask for advice here, anything else sounds like a cop out) In this market here, for instance, if all I did was the same old tired routines every week (and I have been at one restaurant for 3 years now), there is NO WAY I would get the bookings that I get, and mind you, I don't advertise a whole lot but stay quite busy. If your repertoire is that limited, try experimenting before you go to the restaurant, this is a great way to come up with new things and will certainly improve your speed. One other question, do you do this full time or are you a hobbyist?
