Subject: tactful advice

I've run into a problem and I need help being tactful. I've got a balloon
twister who's covering for me at one of my restaurant accounts and the
manager just called me and said she couldn't recognize the things that he
makes. For example, she said the butterfly didn't look like a butterfly,
etc. Now, this account has always been incredibly particular, and I'm
keeping that in mind.
I need him to change his style a bit, I guess, because I somewhat agree with
that manager, from some of what I've seen him make. How do I do this in a
tactful manner? He's really young and he's an incredibly nice and
enthusiastic guy, so I want to be really careful with his feelings.
Do I just show him a bunch of stuff that I make? Should I go through my
balloon menu and teach him that stuff? What happens if he likes his stuff
better than mine? How do I say "that's not okay" in a really nice way?
He's asked me to show him stuff before, so that's one hurdle out of the way,
but how do I get him to do a major overhaul, if that's what's needed?
