Our company has a clause in the contract which states that we are the exclusive balloon decorator, or if we are providing floral decor, we are the exclusive floral decorator.   We don't like to share!

Usually, after seeing our photos, the brides see that our work is gorgeous and that we can provide centerpieces for all budgets.

There are some brides that get centerpieces as gifts or from a family member who really wants to make them.  If it is important for the bride and groom to have them, I encourage it, even if it means the centerpieces aren't up to my standards.   My only stipulation is that we are exclusive decor providers in the same medium, either balloon or floral.  Incidentally, we get most of our work as referrals from satisfied brides who felt that we provided them with exactly what they wanted.

Of course the extra money for the centerpieces would be great.  But if we are doing just the room decor, it opens up another job slot and we make more money taking on an additional wedding or two because we have extra time.  I would never turn down a room decor only job.
